Ingredients

  • 1 pizza dough (about 1 lb or 450 g)
  • 1/2 cup (120 ml) BBQ sauce, plus extra for topping
  • 1 chicken breast (about 0.5 lbs or 225 g), cooked and shredded
  • 1 small red onion, thinly sliced
  • 2 cups (200 g) shredded mozzarella cheese
  • Olive oil for brushing
  • Salt to taste
  • Handful of fresh cilantro leaves for topping

Instructions

  1. Preheat your grill to medium-high heat. If you're using a pizza stone, place it on the grill to heat up.
  2. Roll out your pizza dough on a floured surface to your desired thickness.
  3. Brush one side of the dough with olive oil and place it oil-side down on the grill. Cook for 2-3 minutes, until it starts to puff up and the bottom gets grill marks.
  4. Brush the top side with olive oil and flip the dough over. Quickly spread the BBQ sauce over the dough, then sprinkle on the shredded chicken, red onion slices, and mozzarella cheese. Close the grill and cook for another 3-5 minutes, until the cheese is melted and bubbly.
  5. Remove the pizza from the grill, drizzle with more BBQ sauce, and sprinkle with fresh cilantro leaves. Let it cool for a few minutes before slicing.
