Ingredients

  • 1 1/2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt, to taste
  • 2 tablespoons vegetable oil, divided
  • 1 large onion, finely chopped
  • 1 14-oz can crushed tomatoes
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro, for garnish
  • Cooked basmati rice, for serving
  • Naan bread, for serving

Instructions

  1. In a large bowl, combine the yogurt, garlic, ginger, garam masala, turmeric, cumin, coriander, cayenne pepper, and salt. Mix well, then add the chicken pieces, making sure they are well coated with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight.

  2. Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers and brush with 1 tablespoon of the vegetable oil. Grill the chicken until cooked through and slightly charred, about 5-7 minutes per side. Set aside.

  3. In a large skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the onion and cook until softened and golden, about 5-7 minutes.

  4. Stir in the crushed tomatoes, heavy cream, and the grilled chicken. Bring to a simmer, then reduce the heat to low and cook for an additional 10-15 minutes, until the sauce has thickened and the flavors have melded together.
