Chicken Tikka Masala - Tuesday, Week 19
Chicken Tikka Masala is a beloved English dish with an interesting twist of Indian flavors. It's a creamy, flavorful curry that combines marinated pieces of roasted chicken in a spiced curry sauce. Here's how you can prepare this at home.
Ingredients
- Boneless chicken, cut into pieces - 500g
- Natural yogurt - 2 tbsp
- Tikka masala paste - 2 tbsp
- Onion, chopped - 1
- Garlic cloves, crushed - 2
- Ginger, grated - 1 tbsp
- Canned chopped tomatoes - 400g
- Double cream - 100ml
- Fresh coriander, chopped - handful
- Rice and naan bread, to serve
- Salt and pepper - to taste
Instructions
- Start by marinating the chicken. In a bowl, mix the chicken with the yogurt and tikka masala paste. Cover and chill for at least 1 hour.
- In a large pan, cook the onion with a bit of oil until soft. Add the crushed garlic and grated ginger and cook for another minute.
- Add the marinated chicken to the pan and cook until it starts to turn white.
- Stir in the chopped tomatoes and bring to a boil. Reduce the heat and let it simmer for 20 minutes, until the chicken is cooked through.
- Stir in the cream and cook for another 2-3 minutes.
- Season with salt and pepper, and sprinkle with chopped coriander before serving.
- Serve your Chicken Tikka Masala with rice and naan bread.
