Chicken Tikka Masala - Tuesday, Week 19

Chicken Tikka Masala is a beloved English dish with an interesting twist of Indian flavors. It's a creamy, flavorful curry that combines marinated pieces of roasted chicken in a spiced curry sauce. Here's how you can prepare this at home.

Ingredients

  • Boneless chicken, cut into pieces - 500g
  • Natural yogurt - 2 tbsp
  • Tikka masala paste - 2 tbsp
  • Onion, chopped - 1
  • Garlic cloves, crushed - 2
  • Ginger, grated - 1 tbsp
  • Canned chopped tomatoes - 400g
  • Double cream - 100ml
  • Fresh coriander, chopped - handful
  • Rice and naan bread, to serve
  • Salt and pepper - to taste

Instructions

  1. Start by marinating the chicken. In a bowl, mix the chicken with the yogurt and tikka masala paste. Cover and chill for at least 1 hour.
  2. In a large pan, cook the onion with a bit of oil until soft. Add the crushed garlic and grated ginger and cook for another minute.
  3. Add the marinated chicken to the pan and cook until it starts to turn white.
  4. Stir in the chopped tomatoes and bring to a boil. Reduce the heat and let it simmer for 20 minutes, until the chicken is cooked through.
  5. Stir in the cream and cook for another 2-3 minutes.
  6. Season with salt and pepper, and sprinkle with chopped coriander before serving.
  7. Serve your Chicken Tikka Masala with rice and naan bread.
