Ingredients

  • 500g white fish fillets (cod, tilapia, or mahi-mahi)
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeรฑo, finely chopped (optional)
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 avocado, sliced (for garnish)

Instructions

  1. Prep the Mango Salsa: Combine the diced mango, red bell pepper, red onion, jalapeรฑo (if using), and lime juice in a bowl. Add salt to taste and stir. Set aside to let the flavors meld.
  2. Cook the Fish: Preheat the oven to 200ยฐC (400ยฐF). Place the fish fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake for 12-15 minutes or until the fish flakes easily.
  3. Assemble the Tacos: Warm the corn tortillas in a skillet over medium heat. Place a piece of the baked fish on each tortilla. Top with mango salsa and sliced avocado.
  4. Garnish and Serve: Sprinkle chopped cilantro over the top for added flavor and a pop of color.
