Danish Split Pea Soup for a Comforting Midweek Meal - Wednesday, Week 20

Today we're warming up with a traditional Danish Split Pea Soup. It's a hearty and nutritious dish perfect for a midweek meal.

Ingredients

  • 500 grams of dried split peas
  • 2 liters of water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 500 grams of ham hock
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Rinse the split peas under cold water.

  2. In a large pot, combine the split peas, water, onion, carrots, celery, and ham hock. Bring to a boil over high heat.

  3. Reduce the heat to low and simmer, covered, for about 2 hours, until the peas are soft and the soup is thickened.

  4. Remove the ham hock from the pot. Once it's cool enough to handle, remove the meat from the bone, chop it, and return it to the pot.

  5. Season the soup with salt and pepper. Garnish with chopped fresh parsley before serving.
