Ingredients:

  • 1 boneless leg of lamb (about 4-5 pounds)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the boneless leg of lamb on a cutting board, and open it up so it lays flat.

  4. Rub the herb mixture evenly onto the inside of the lamb, making sure to cover the entire surface.
  5. Roll the lamb back into its original shape, and secure it with kitchen twine to help it maintain its form while cooking.
  6. Transfer the lamb to a roasting pan, and cook for approximately 1.5 hours, or until it reaches an internal temperature of 135°F (57°C) for medium-rare doneness. Adjust the cooking time accordingly for your preferred level of doneness.
  7. Remove the lamb from the oven, and let it rest for 15 minutes to allow the juices to redistribute.
  8. Slice the lamb, serve it with your favorite side dishes, and enjoy!
