Friday Menu, Week 24: A Perfect Polish Pairing - Kotlet Schabowy and Mizeria

As we wrap up our Polish food journey, we present you with a classic combination: Kotlet Schabowy, a breaded pork cutlet, served alongside Mizeria, a refreshing cucumber salad. This pairing is a staple of Polish family meals and is sure to leave you satisfied.


Ingredients for Kotlet Schabowy

  • 4 pork chops (approximately 1 lb or 450 g total)
  • 1 cup (or 120 g) all-purpose flour
  • 2 eggs
  • 2 cups (or 200 g) bread crumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Ingredients for Mizeria

  • 2 large cucumbers (approximately 1 lb or 450 g total)
  • 1/2 cup (or 120 ml) sour cream
  • 2 tablespoons (or 30 ml) white vinegar
  • 1 tablespoon (or 15 ml) sugar
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions for Kotlet Schabowy

  1. Season the pork chops with salt and pepper.
  2. Dredge each pork chop in flour, dip in beaten eggs, and then coat with bread crumbs.
  3. Heat the vegetable oil in a skillet over medium heat. Once the oil is hot, add the breaded pork chops and fry until golden brown on both sides. This should take about 4-5 minutes per side.
  4. Once cooked, remove the pork chops from the skillet and drain on a paper towel.

Instructions for Mizeria

  1. Thinly slice the cucumbers.
  2. In a bowl, mix the sour cream, vinegar, and sugar. Season with salt and pepper.
  3. Add the sliced cucumbers to the bowl and mix until they are well coated with the dressing.
  4. Garnish with fresh dill before serving.
