Welcome to our Monday menu! Today, we're serving up a popular Danish dish, Frikadeller with Red Cabbage. Frikadeller are Danish meatballs, made from a mixture of pork and beef, and they are typically served with potatoes and red cabbage. Let's dive into the recipe!

Ingredients

For the Frikadeller:

  • 500 grams of ground pork
  • 500 grams of ground beef
  • 1 large onion, finely chopped
  • 100 grams of breadcrumbs
  • 1 egg
  • 125 milliliters of milk
  • Salt and pepper to taste
  • Butter for frying

For the Red Cabbage:

  • 1 medium red cabbage, finely shredded
  • 2 tablespoons of butter
  • 2 tablespoons of sugar
  • 50 milliliters of red wine vinegar
  • 1 cinnamon stick
  • Salt and pepper to taste

Instructions

  1. Start by making the Frikadeller. Mix the ground pork and beef together in a large bowl. Add the onion, breadcrumbs, egg, and milk. Season with salt and pepper and mix until well combined.

  2. Form the mixture into small, oval-shaped meatballs. Place them on a plate and refrigerate for 30 minutes.

  3. While the Frikadeller are chilling, start on the red cabbage. Melt the butter in a large pot over medium heat. Add the cabbage and stir to coat in the butter.

  4. Add the sugar, vinegar, and cinnamon stick to the pot. Stir well, then reduce the heat to low, cover, and simmer for about an hour, stirring occasionally. The cabbage should be tender and the flavors well combined. Season with salt and pepper.

  5. Heat a large pan over medium heat and add a knob of butter. Once the butter is melted, add the Frikadeller and cook for about 5 minutes on each side, until browned and cooked through.

  6. Serve the Frikadeller with the red cabbage and enjoy your Danish feast!
