The rich, oily flavors of mackerel pair exquisitely with the tangy freshness of olives and tomatoes. This dish captures the essence of the Mediterranean coast, offering a culinary journey with every bite.

Ingredients:

  • Mackerel Fillets: 4, fresh and cleaned
  • Extra Virgin Olive Oil: 60ml plus extra for brushing
  • Lemon Zest: From 1 lemon
  • Lemon Juice: From 1 lemon
  • Mixed Olives (pitted and chopped): 150g
  • Cherry Tomatoes: 200g, halved
  • Red Onion: 1 small, finely chopped
  • Parsley (freshly chopped): A handful
  • Garlic Cloves: 2, minced
  • Salt: To taste
  • Black Pepper: Freshly ground, to taste
  • Chili Flakes (optional): A pinch

Instructions:

  1. Prepare the Relish: In a bowl, combine the chopped olives, halved cherry tomatoes, finely chopped red onion, minced garlic, lemon zest, and lemon juice. Drizzle with the 60ml of olive oil and mix well. Season with salt, black pepper, and chili flakes if desired. Let it sit to allow the flavors to meld.
  2. Grill the Mackerel: Preheat your grill or grill pan to medium-high heat. Brush the mackerel fillets with olive oil and season with salt and pepper. Place them on the grill, skin-side down, and grill for about 4-5 minutes on each side, or until the fish is cooked through and has a nice char.
  3. Serve: Once the mackerel is cooked, transfer to serving plates. Spoon a generous amount of the olive and tomato relish over the grilled mackerel. Garnish with freshly chopped parsley.
