Ingredients

  • 6 ripe tomatoes, peeled and chopped
  • 1 red bell pepper, deseeded and chopped
  • 1 cucumber, peeled and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 1/4 cup (60 ml) of red wine vinegar
  • 1/2 cup (120 ml) of extra virgin olive oil
  • Salt and pepper, to taste

  • Chopped cucumber, red onion, and red bell pepper
  • Drizzle of olive oil

Instructions

  1. Combine the tomatoes, bell pepper, cucumber, red onion, and garlic in a blender or food processor.
  2. Blend until the mixture becomes a thick liquid.
  3. Add the red wine vinegar, olive oil, salt, and pepper, then blend again until smooth.
  4. Pour the gazpacho into a bowl and chill in the refrigerator for at least 2 hours, or until it's thoroughly cold.
  5. Serve the gazpacho in bowls or glasses, garnished with chopped cucumber, red onion, red bell pepper, and a drizzle of olive oil.
