Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1/4 cup olive oil, divided
  • 2 tablespoons fresh lemon juice, divided
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 large head romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup crumbled feta cheese

For the dressing:

  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a shallow dish, combine 2 tablespoons of olive oil, 1 tablespoon of lemon juice, minced garlic, dried oregano, salt, and pepper. Add the chicken breasts and toss to coat evenly. Marinate for at least 30 minutes, or up to 2 hours.

  2. Preheat a grill or grill pan to medium-high heat. Grill the chicken breasts for 5-7 minutes per side, or until cooked through and internal temperature reaches 165Β°F (74Β°C). Remove from the grill and let rest for a few minutes before slicing into thin strips.

  3. In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

To make the dressing:

  1. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper. Taste and adjust the seasoning as needed.

  2. Drizzle the dressing over the salad and toss gently to combine. Top the salad with the grilled chicken strips.
