Travel to the shores of the Mediterranean with this classic Greek Salad topped with juicy grilled chicken. Crunchy vegetables, tangy feta cheese, and a simple yet flavorful dressing make this salad the perfect meal for a hot summer day.

Ingredients

  • 4 chicken breasts
  • Olive oil, for grilling
  • Salt and pepper, to taste

For the salad:

  • 1 large cucumber, chopped
  • 4 ripe tomatoes, chopped
  • 1 red onion, thinly sliced
  • 1/2 cup (100 g) of Kalamata olives
  • 1 green bell pepper, chopped
  • 8 oz (225 g) of feta cheese, cubed

For the dressing:

  • 1/4 cup (60 ml) of extra virgin olive oil
  • 2 tbsp (30 ml) of red wine vinegar
  • 1 tsp (5 ml) of dried oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill or grill pan over medium-high heat. Brush the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165Β°F (74Β°C). Once cooked, set aside to rest.
  2. In a large bowl, combine the cucumber, tomatoes, red onion, olives, green bell pepper, and feta cheese.
  3. For the dressing, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Slice the grilled chicken and arrange it on top of the salad.
  6. Serve the salad immediately, ideally with a glass of crisp Assyrtiko to complement the flavors.
