Ingredients
- 4 chicken breasts
- Olive oil, for grilling
- Salt and pepper, to taste
For the salad:
- 1 large cucumber, chopped
- 4 ripe tomatoes, chopped
- 1 red onion, thinly sliced
- 1/2 cup (100 g) of Kalamata olives
- 1 green bell pepper, chopped
- 8 oz (225 g) of feta cheese, cubed
For the dressing:
- 1/4 cup (60 ml) of extra virgin olive oil
- 2 tbsp (30 ml) of red wine vinegar
- 1 tsp (5 ml) of dried oregano
- Salt and pepper, to taste
Instructions
- Preheat your grill or grill pan over medium-high heat. Brush the chicken breasts with olive oil and season with salt and pepper. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165Β°F (74Β°C). Once cooked, set aside to rest.
- In a large bowl, combine the cucumber, tomatoes, red onion, olives, green bell pepper, and feta cheese.
- For the dressing, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently to combine.
- Slice the grilled chicken and arrange it on top of the salad.
- Serve the salad immediately, ideally with a glass of crisp Assyrtiko to complement the flavors.
