Pan-Seared Salmon with White Asparagus and Lemon Herb Sauce - Week 15, Thursday

Ingredients

  • 4 salmon fillets, skin-on (about 6 oz or 170g each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 lb (450g) white asparagus, trimmed and peeled
  • 1/4 cup (60ml) fresh lemon juice
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 clove garlic, minced
  • Salt and pepper, to taste (for the sauce)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes, until the skin is crisp and golden.
  3. Carefully flip the salmon fillets and cook for an additional 4-5 minutes, until cooked through and opaque. Transfer the cooked salmon to a plate and keep warm.
  4. In the same skillet, add the white asparagus and cook for 5-6 minutes, until tender but still crisp. Season with salt and pepper to taste.
  5. While the asparagus cooks, prepare the lemon herb sauce. In a small bowl, whisk together the lemon juice, extra virgin olive oil, parsley, dill, chives, and garlic. Season with salt and pepper to taste.
  6. To serve, divide the asparagus among four plates and top each with a salmon fillet. Drizzle the lemon herb sauce over the salmon and asparagus, and enjoy!
