Ingredients
- 4 salmon fillets, skin-on (about 6 oz or 170g each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 lb (450g) white asparagus, trimmed and peeled
- 1/4 cup (60ml) fresh lemon juice
- 1/4 cup (60ml) extra virgin olive oil
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1 clove garlic, minced
- Salt and pepper, to taste (for the sauce)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the salmon fillets in the skillet, skin-side down, and cook for 4-5 minutes, until the skin is crisp and golden.
- Carefully flip the salmon fillets and cook for an additional 4-5 minutes, until cooked through and opaque. Transfer the cooked salmon to a plate and keep warm.
- In the same skillet, add the white asparagus and cook for 5-6 minutes, until tender but still crisp. Season with salt and pepper to taste.
- While the asparagus cooks, prepare the lemon herb sauce. In a small bowl, whisk together the lemon juice, extra virgin olive oil, parsley, dill, chives, and garlic. Season with salt and pepper to taste.
- To serve, divide the asparagus among four plates and top each with a salmon fillet. Drizzle the lemon herb sauce over the salmon and asparagus, and enjoy!
