Shepherd's Pie - Monday, Week 19

Comfort food at its best, the Shepherd's Pie is a classic English dish that is hearty, wholesome, and delicious. This dish is made with a base of minced lamb, mixed with veggies and topped with a fluffy layer of mashed potatoes. Here's how you can make it at home.

Ingredients

  • Minced lamb - 500g
  • Onion, chopped - 1
  • Carrots, diced - 2
  • Peas - 200g
  • Tomato puree - 2 tbsp
  • Worcestershire sauce - 1 tbsp
  • Lamb or vegetable stock - 500ml
  • Potatoes, peeled and quartered - 1kg
  • Butter - 50g
  • Milk - 100ml
  • Salt and pepper - to taste

Instructions

  1. Start by preheating your oven to 200Β°C (or 180Β°C for fan assisted ovens).
  2. In a large pan, cook the minced lamb until brown. Add the chopped onion and diced carrots and cook for another 5 minutes.
  3. Stir in the peas, tomato puree, Worcestershire sauce, and stock. Let it simmer for 20 minutes.
  4. Meanwhile, cook the potatoes in boiling salted water until tender. Drain and mash them with the butter and milk. Season with salt and pepper.
  5. In a baking dish, layer the meat mixture, then the mashed potatoes on top. Use a fork to create a ridged pattern on the potato topping.
  6. Bake for 25-30 minutes or until the top is golden.
  7. Serve hot and enjoy your homemade Shepherd's Pie!

Pair this dish with a good bottle of Chardonnay or a rich Cabernet Sauvignon.
