Shepherd's Pie - Monday, Week 19
Comfort food at its best, the Shepherd's Pie is a classic English dish that is hearty, wholesome, and delicious. This dish is made with a base of minced lamb, mixed with veggies and topped with a fluffy layer of mashed potatoes. Here's how you can make it at home.
Ingredients
- Minced lamb - 500g
- Onion, chopped - 1
- Carrots, diced - 2
- Peas - 200g
- Tomato puree - 2 tbsp
- Worcestershire sauce - 1 tbsp
- Lamb or vegetable stock - 500ml
- Potatoes, peeled and quartered - 1kg
- Butter - 50g
- Milk - 100ml
- Salt and pepper - to taste
Instructions
- Start by preheating your oven to 200Β°C (or 180Β°C for fan assisted ovens).
- In a large pan, cook the minced lamb until brown. Add the chopped onion and diced carrots and cook for another 5 minutes.
- Stir in the peas, tomato puree, Worcestershire sauce, and stock. Let it simmer for 20 minutes.
- Meanwhile, cook the potatoes in boiling salted water until tender. Drain and mash them with the butter and milk. Season with salt and pepper.
- In a baking dish, layer the meat mixture, then the mashed potatoes on top. Use a fork to create a ridged pattern on the potato topping.
- Bake for 25-30 minutes or until the top is golden.
- Serve hot and enjoy your homemade Shepherd's Pie!
