Toad in the Hole - Wednesday, Week 19
Toad in the Hole is a traditional English dish consisting of sausages in Yorkshire pudding batter, usually served with onion gravy and vegetables.
Ingredients
- Sausages - 8 (around 400g)
- Plain flour - 120g
- Eggs - 2
- Milk - 300ml
- Vegetable oil - 4 tbsp
- Salt and pepper - to taste
For the gravy:
- Onion, thinly sliced - 1
- Beef stock - 500ml
- Red wine - 125ml
- Plain flour - 2 tbsp
- Butter - 1 tbsp
Instructions
- Preheat your oven to 220C/200C fan.
- Put 1 tbsp vegetable oil into an ovenproof dish and add the sausages. Bake for 15 minutes until browned.
- Meanwhile, make the batter. In a bowl, combine the flour, eggs, milk, and a pinch of salt and pepper. Whisk until smooth.
- Remove the sausages from the oven and pour the batter over them. Return to the oven and cook for 25-30 minutes until the batter is risen and golden.
- While the dish is cooking, make the gravy. Melt the butter in a pan, add the onion and cook until caramelized. Stir in the flour and cook for a minute. Gradually add the wine and stock, stirring constantly, until you have a smooth gravy. Simmer for 15 minutes.
- Serve the Toad in the Hole with onion gravy.
