Ingredients

  • 4 (6-ounce/170g) salmon fillets
  • 1/4 cup (60ml) maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 cups (300g) cherry tomatoes
  • 2 cups (200g) broccoli florets
  • 1 medium red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Line a large baking sheet with parchment paper.

  2. In a small bowl, whisk together maple syrup, soy sauce, lemon juice, and minced garlic. Season salmon fillets with salt and pepper, and place them on one side of the prepared baking sheet.

  3. In a large bowl, combine cherry tomatoes, broccoli florets, and red onion wedges. Drizzle with olive oil, season with salt, pepper, and dried thyme, and toss to coat evenly. Arrange the vegetables in a single layer on the other side of the prepared baking sheet.

  4. Spoon half of the maple-soy mixture over the salmon fillets, reserving the rest for later.

  5. Place the baking sheet in the preheated oven and roast for 15 minutes. Remove from the oven, stir the vegetables, and brush the remaining maple-soy mixture over the salmon fillets. Return the baking sheet to the oven and continue to roast for another 5-10 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
